2 cups raw cashews
1-2 tablespoons neutral oil (such as grapeseed or vegetable oil)

1. Preheat your oven to 350°F (175°C). Spread the raw cashews in a single layer on a baking sheet. Roast the cashews in the preheated oven for about 10-12 minutes, or until they become golden brown. Be sure to stir them halfway through the roasting time to ensure even browning.

2. Allow the roasted cashews to cool to room temperature. This step is crucial to prevent the cashew butter from becoming too runny when blended.

3. Place the cooled cashews in a high-powered blender or food processor. You may need to stop and scrape down the sides periodically to ensure even blending.

4. Add 1-2 tablespoons of neutral oil to the blender. This helps to achieve a smoother consistency. You can adjust the amount of oil based on your desired thickness.

5. If you like, you can add a touch of sweetness by incorporating honey, maple syrup, or another sweetener to taste. Additionally, a pinch of salt can enhance the overall flavor. Start with small amounts and adjust according to your preference.

6. Continue blending until you achieve a smooth and creamy consistency. This might take a few minutes, and you may need to scrape down the sides of the blender or food processor periodically.

7. Transfer the cashew butter to a clean, airtight jar or container. Store it in the refrigerator to maintain freshness.
